Paul’s advice

Storing and using your vanilla

Store

In glass, in the cupboard.

Between 15 and 20 °C, away from light, a vanilla bean doesn’t expire: it improves with time. Never in the refrigerator: moisture damages it.

The storage guide

Use

Split, scrape, infuse.

Scrape out the caviar, then let everything infuse cold in the milk or cream for 24 to 48 hours. Once empty, the bean can still scent a jar of sugar.

Pastry techniques

White crystals on your vanilla beans? That’s vanillin frost, a sign of quality.

FAQs

Which vanilla varieties do you offer?

We source 19 origins covering the main vanilla species: planifolia (known as Bourbon), the most famous, with indulgent, cocoa-like notes; tahitensis, floral and aniseed, emblematic of Tahiti; pompona, rare and powerful, nicknamed “banana vanilla”; and extremely rare species — cribbiana, bahiana, chamissonis, sotoarenasii, odorata — found nowhere else.

To choose according to your taste, see our guide to the varieties or let our quiz guide you.

What is the difference between Bourbon vanilla and Tahitensis vanilla?

Vanilla planifolia Bourbon from Madagascar is very rich in vanillin, with warm, woody notes. Tahitensis, which contains almost no vanillin, is more floral and offers subtler, more exotic aromas. Each variety has its own personality!

Are the vanilla beans sustainably grown?

Yes. We work exclusively with growers committed to practices that respect the environment and local communities — this is the heart of our direct-from-growers approach, told in our story.

The Galand Vanille guide

Exceptional vanilla beans

the complete guide, by Paul Galand

At Galand Vanille, every vanilla bean is hand-picked, directly from the growers. From Madagascar to Tahiti and on to rare species found nowhere else, here is the complete guide to our exceptional vanillas.

What is an exceptional vanilla bean?

An exceptional bean is recognized above all by its scent: intense, complex and lingering aromatics. It is rich in caviar — those thousands of tiny black seeds where the aromas are concentrated — and patiently cured. Its texture depends on the curing: some beans stay supple and oily, others are drier and can be brittle. A drier bean is in no way a defect, quite the opposite: it is often the sign of a long curing and a higher aromatic concentration. Far from industrial vanilla, each one fully expresses its terroir.

An intense scentPowerful, complex and lingering aromatics.
Rich in caviarPacked with seeds, where the aromas are concentrated.
Patiently curedSupple or drier depending on the curing — always concentrated.

Complete guide to vanilla bean varieties

Vanilla is a living material, a complex spice that is not limited to a single origin. I travel to plantations around the globe to select beans with a unique aromatic palette. From the famous Bourbon vanilla to the rarest wild varieties, each species tells the story of its terroir — here is how to choose the perfect bean.

The Planifolia variety is the most widely grown in the world. In the Indian Ocean, it carries the prestigious Bourbon Vanilla appellation: the quintessential indulgent vanilla, with vanilla, chocolate, woody and spicy notes.

See the whole Planifolia collection →

The Tahitensis variety stands out for its higher fatty-acid content and its aniseed compounds, which create a very noticeable floral, airy olfactory impact — perfect for cold infusion.

  • Papua New GuineaGentle and intensely floral, it develops notes of anise, chocolate and leather.
  • Tahiti Raiatea (Haapape)Dense, long beans releasing powerful notes of bitter almond and cherry.
  • Tahiti TahaaSun-dried and massaged, it has a subtly floral, aniseed scent with notes of monoi.
  • EcuadorA high-altitude vine rich in aniseed molecules: jasmine, olive oil and gingerbread.

See the whole Tahitensis collection →

Less well known and incredibly rare, Pompona vanilla offers short, wide beans generous in seeds (vanilla caviar), with unexpected profiles.

  • New CaledoniaA floral, tangy flavor, with notes of strawberry, dried banana and cinnamon.
  • Tsy Taitry (Madagascar)A rare hybrid centered on candied fruit and black olive.
  • Peru (dried & fresh)Grown in the Amazon: notes of tobacco, licorice and tonka, plus mirabelle plum in the fresh version.
  • MartiniqueNaturally split beans, offering notes of amarena cherry and tarte Tatin apple.
  • Brazil (Cerrado)A gem pollinated by endemic bees, with aromas of apple compote and jasmine.
  • MexicoBlack and rich, they evoke black olive and a very floral bouquet.
  • ColombiaOne of the rarest in the world: notes of ripe fruit, tobacco and white flowers.

See the whole Pompona collection →

For purists in search of something new, these wild & endemic species reveal the remarkable botanical complexity of vanilla.

Which vanilla for your recipes?

Aniseed and floral notes, perfect for flavoring your creams and ganaches without heating them.

How to store your vanilla beans

Properly stored, your vanilla beans keep all their aromatic power for months, even years. A few simple habits are enough to preserve their scent until the very last use.

The right container

An airtight glass tube, away from light, heat and moisture. Glass protects the aromas far better than a pouch left open to the air.

Never in the fridge

Cold and moisture create condensation, encourage mold and dull the aromas. Choose a stable room temperature, between 15 and 20 °C.

Frost, a sign of quality

Fine white crystals on the surface? That’s crystallized vanillin — a sign of aromatic richness, not mold (which is greenish and fuzzy).

Remember to air your beans for a few moments every week, then close the container tightly to avoid condensation. And never throw away a scraped bean: rinsed and dried, it will flavor a homemade vanilla sugar or an infused rum. Discover our glass storage tubes to keep your vanillas in the best conditions.

“I can’t wait to shake up the way you see this extraordinary spice.”
