Vanilla planifolia frosted from Réunion
An intense, crystalline vanilla
This frosted planifolia develops powerful, structured aromatics: spicy notes, muscovado sugar, red berries, with a marked and lingering vanilla presence.
The natural crystallization on the surface, called frost, reflects a high concentration of vanillin and full maturity.
It is meant for preparations where you are looking for intensity: crème anglaise, ganaches, infused rums (rhum arrangé), chocolate desserts or reduced sauces.
Bois-Blanc, a volcanic land
Grown in the Bois-Blanc terroir, on Réunion, this vanilla draws its richness from active, mineral volcanic soils.
This terroir gives the beans a singular aromatic depth, with a spicy structure and a long finish on the palate.
At the origins of Bourbon
Réunion, formerly called Bourbon Island, is the historic homeland of Bourbon vanilla.
The name later spread to other islands of the Indian Ocean growing planifolia with similar methods.
A word from Paul Galand
“Réunion is the origin. In the Bois-Blanc terroir, vanilla takes on a particular, almost spicy intensity. Thanks to its frost, you immediately sense its vanillin concentration. It is a straightforward, powerful vanilla that doesn’t cheat.”

Frosted vanilla from Réunion: at the origins of Bourbon vanilla
Réunion, formerly called Bourbon Island, is the historic homeland of Bourbon vanilla. Here this frosted planifolia expresses powerful, crystalline aromatics: a straightforward, concentrated vanilla that doesn’t cheat.
Bourbon Island, the cradle of a name
This is where the Bourbon name was born, before spreading to the other islands of the Indian Ocean. Choosing a vanilla from Réunion means going back to the source of a style that conquered the world.
Bois-Blanc, a volcanic terroir
Grown in the Bois-Blanc terroir, this vanilla draws its richness from active, mineral volcanic soils, which give it depth, a spicy structure and a long finish.
Frost: crystallized vanillin
The natural crystallization on the surface, the frost, reflects a high concentration of vanillin and full maturity. These fine white crystals are the visible proof of the bean’s power.
A spicy, muscovado profile
The aromatics are marked and lingering: spicy notes, muscovado sugar, red berries, with a clear vanilla presence.
How to use it
- 1Split and scrape: the frost blends into the mixture.
- 2Infuse: hot for intense preparations, or cold for 24 to 48 h for a cleaner taste.
- 3Ideal in infused rum and chocolate desserts.
Storage
More concentrated and slightly less moist: store it in an airtight glass tube, away from light, at room temperature. The frost may continue to develop.
No. It is crystallized vanillin, a sign of high concentration and fine maturity.
For its history, since it is the cradle of Bourbon, and for its spicier profile, shaped by the volcanic terroir of Bois-Blanc.
Infused rums, chocolate desserts, creams and reduced sauces.
