Vanilla pompona from Brazil
A wild vanilla
Brazilian Pompona is a wild treasure of nature. Its aromatic power is immediate, with floral notes of jasmine, tarte Tatin and a light hint of aniseed.
This vanilla will enhance your sweet preparations such as flan, rice pudding or crème anglaise. It also expresses itself perfectly in infused rums, alcoholic preparations, or in savory cooking with fish.
An exceptional selection
Pompona beans are among the largest in the world: green, they can weigh up to 100 g, and after curing they reach about 25 g, concentrating all their power. They are packed with seeds, a testament to their quality and exceptional ripeness. From the grandiflora species, each bean is wild, naturally pollinated by hummingbirds and bees, which reinforces their authenticity.
Brazilian terroir
This vanilla grows in the tropical forests of Brazil, in ideal natural conditions. The rich, humid soils, combined with natural pollination and slow growth, produce beans of unrivaled density and aroma. It is a micro-production, rare and precious, that requires patience and know-how to reach its aromatic peak.
A word from Paul Galand
“Brazilian Pompona is one of my favorite vanillas. It is rare, hard to find, and each bean is a little treasure. Brazil is a wild land where there are many endemic species. It is a country that is only just starting to produce vanilla.
Today, I want to be the first to sell Brazilian vanillas, because they deserve attention. Beans of outsized dimensions, with very surprising aromas. As a pastry chef, when I first smelled them, they reminded me of my grandmother’s apple compote.”
