Vanilla fresh pompona from Peru
The freshness of a bean
The beans are impressive in size, plump, full of substance. This bean gives off aromas of mirabelle plum, white tobacco and tonka.
Here, the choice is deliberate: to preserve the freshness of the bean rather than push classic curing. This approach offers a new take on pompona, far from the profiles usually developed by long curing.
Fresh Pompona from Peru pairs with all dairy-based preparations, such as a pastry cream or an ice cream. But also with baked doughs such as brioche, tart pastry…
The Andes, a still-wild terroir
Fresh pompona from Peru is a vanilla apart. Harvested in the Amazonian foothills of the Andes, at around 800 meters above sea level, it grows in a still largely wild environment. Known locally as “Sekut”, it is considered one of the most primordial forms of vanilla.
Some flowers there are still pollinated naturally by bees, anchoring this vanilla in an intact ecosystem, deeply tied to its terroir.
A word from Paul Galand
“With this vanilla, I wanted to explore something different: freshness.
I worked hand in hand with the grower to obtain these huge beans, with a very particular quality and texture.
These are not the same aromas as a cured pompona. It is something rawer, more direct. It is another take on vanilla, almost in its original state.”

Fresh Pompona vanilla from Peru: choosing freshness
Here is a vanilla apart. Rather than classic curing, the choice here is to preserve the freshness of the bean: a new take on the species.
Huge beans, full of substance
Beans impressive in size, plump, full of substance.
A deliberate choice: preserving freshness
Not curing it for long keeps a rawer, more direct, almost original aromatic profile: more vegetal and fresher than the cured version.
Mirabelle plum, white tobacco and tonka
Aromas of mirabelle plum, white tobacco and tonka.

How to use it
- 1Split this huge, plump bean.
- 2In dairy-based preparations: pastry cream, ice cream (cold infusion for 24 to 48 h).
- 3In baked doughs: brioche, tart pastry.
- 4Use it without waiting too long to enjoy its freshness.
Storage
A fresh, plump bean, more delicate: store it in an airtight glass tube, away from light, and use it fairly quickly.
A bean deliberately given little curing, for a raw, direct aromatic profile.
The fresh one keeps a more vegetal, delicate signature; the cured one is more powerful.
Dairy-based preparations (pastry cream, ice cream) and baked doughs (brioche, tart pastry).
