The Galand Vanille guide
Vanilla Planifolia
Vanilla planifolia is the queen species: it accounts for around 95% of world production. In the Indian Ocean, it takes the prestigious name of “Bourbon” vanilla. Rich in vanillin, it is the most versatile vanilla bean, perfect for pastry. At Galand Vanille, each origin is hand-selected by Paul Galand direct from the growers.
Vanilla planifolia: one species, a thousand terroirs
While the species is one and the same, each origin tells a different aromatic story. Terroir shapes surprisingly varied profiles, from the most indulgent to the woodiest.
Our vanilla planifolia origins
- Vanilla Bourbon from Madagascar: chocolate, caramel, butter — the indulgent benchmark.
- Vanilla planifolia from Tanzania: notes of leather and red berries.
- Vanilla planifolia from India: a woody profile, reminiscent of the forest floor.
- Vanilla planifolia from Mexico: the historic birthplace, with notes of chocolate, nutmeg and walnut.
- Vanilla planifolia from Indonesia (Sulawesi): spiced red berries.
- Vanilla from São Tomé: indulgent notes of cocoa.
Frosted planifolia vanillas, the pinnacle of curing
“Frosted” vanilla shows vanillin crystals on its surface, the result of a long, carefully controlled curing. Far from being a flaw, this drier texture is the mark of exceptional aromatic concentration.
- Frosted vanilla from Mauritius: blond tobacco and honey.
- Frosted vanilla from New Caledonia: coffee and cherry.
- Frosted vanilla from Réunion: deep notes of muscovado.
- Frosted vanilla from Tanzania: intensity and roundness.
- Frosted vanilla from Brittany: a Galand Vanille exclusive, bold and unique.
How to use it
Thanks to its high vanillin content, vanilla planifolia is a safe bet for your recipes: crème anglaise, flans, cakes, caramels. A drier or more brittle bean is not a flaw, but often the sign of extended curing. For storage and dosage, our expert advice guides you toward the best use.
To explore other profiles, compare it with Madagascar vanilla and the delicate vanilla tahitensis. All our beans come direct from the growers.
