Vanilla planifolia Bourbon from Mauritius
A rare Bourbon vanilla, a controlled intensity
On the small island of Mauritius, in the heart of the Indian Ocean, a Bourbon vanilla like no other is born. Not Madagascar, not Réunion, not the Comoros: here, the identity is singular.
Aromatically, it is intensely vanilla-forward, with notes of rose, grape, dulce de leche and a hint of iodine.
In cooking, it brings breadth and depth. It signs a cream, structures a ganache, transforms a chantilly cream or a simple syrup into an exceptional preparation.
A small-scale production
The island, modest in size, grows vanilla in small quantities. The plantations sit alongside cocoa trees, fruit trees and vegetable crops on rich, living volcanic soil. Production is very small, especially at this level of quality.
A word from Paul Galand
“This Mauritius vanilla stands apart. It has nothing to do with the other Bourbons I know.
In Mauritius, there are hardly any vanilla plantations left; you can count them on the fingers of one hand. The grower does a great job on the curing of the vanilla, which gives this planifolia a unique character.
It is an exceptional vanilla, almost a collector’s item.”

Mauritius vanilla: a Bourbon like no other
On the small island of Mauritius, in the heart of the Indian Ocean, a Bourbon vanilla with a singular character is born. Not Madagascar, not Réunion, not the Comoros: here, the identity stands apart. An intensely vanilla-forward vanilla, powerful and perfectly controlled.
A small-scale production
The island grows vanilla in small quantities, on rich volcanic soil, among cocoa trees, fruit trees and vegetable crops. Vanilla growing has almost disappeared there: the growers can be counted on the fingers of one hand.
Exceptional curing
The grower carries out precise curing work, supported by a demanding scientific approach, which pushes the vanillin content to its natural maximum and gives this planifolia its unique character.
A profile of rose, grape and dulce de leche
The aroma evokes rose, grape, dulce de leche, with a hint of iodine: a floral and indulgent palette, carried by an intense vanilla.
How to use it
- 1Split and scrape the bean to release the caviar.
- 2Infuse hot to structure a cream, a ganache, a chantilly cream, or cold for 24 to 48 h.
- 3Transforms a simple syrup into an exceptional preparation.
Through its rare crystallization and its balance: a high concentration of vanillin without harshness.
Intensely vanilla-forward, with notes of rose, grape, dulce de leche and a hint of iodine.
The island produces small quantities, and this level of quality remains rare.
