Vanilla pompona Tsy Taitry from Madagascar
A hybrid vanilla
Balanced and expressive, Tsy Taitry vanilla develops a precise, structured aromatic profile.
Intensely vanilla, with notes of candied fruit, an almost green-olive touch, and that candy-like sensation on the finish.
A hybrid born of a carefully controlled cross, it offers a different take on classic planifolia: less linear, more constructed, with fine length on the palate and an ample aromatic texture.
In pastry, it naturally complements creams, flan mixtures, ganaches and biscuits.
It also works very well cold, in whipped cream, a panna cotta or a gentle infusion.
Madagascar – North-East terroir
Grown in the Sava region, in north-eastern Madagascar, this vanilla benefits from a hot, humid climate, rich soils and long-standing expertise in preparation and curing.
This terroir gives dense, well-nourished beans, harvested ripe and worked with precision.
On this solid foundation, the Tsy Taitry hybrid shows its full relevance: it keeps the stability and aromatic diffusion of a great Malagasy vanilla, while bringing a fruitier, more singular, more unexpected dimension.
Although it grows in Madagascar, this vanilla cannot claim the “Bourbon” name, which is reserved exclusively for the planifolia species. As it is not a pure planifolia, it falls outside this designation, while fully expressing the richness and high standards of the Malagasy terroir.
A word from Paul Galand
“Tsy Taitry really is the successful cross between planifolia and pompona. For me, it’s an excellent choice. When you already know the classics and want to step outside the box without going too far, Tsy Taitry is perfect. It’s a vanilla that intrigues.”

The Sava terroir, the foundation of its richness
Grown in the Sava region, in north-eastern Madagascar: a hot, humid climate, rich soils and curing expertise. Dense, well-nourished beans.
How to use it
- 1Split and scrape: a dense, well-nourished bean.
- 2Infuse hot (creams, flans, ganaches) or cold for 24 to 48 h (panna cotta, whipped cream).
- 3A few seeds to give a classic dessert a twist.
A vanilla born from crossing two species, here planifolia and pompona.
The Bourbon name is reserved for pure planifolia; this hybrid is excluded from it.
For those who know the classic vanillas and want a fruitier, more original profile.
