The Planifolia Vanilla from Sulawesi (Indonesia) is a bean of exceptional volcanic power. Harvested at full maturity on the mineral-rich soils at the foot of the volcanoes, it develops a complex aromatic profile of spiced red berries, muscovado sugar and orange peel. Its high vanillin content, sometimes visible as a natural frosting, makes it the ideal partner for intense chocolates, red berry jams and gastronomic creations with character.

A word from Paul

“Indonesia is one of the most beautiful terroirs I have visited. In Sulawesi, near the volcano, you can feel an extraordinarily rich land. I love this vanilla for its ripeness, its natural power. It’s an accomplished vanilla that leaves its mark.”

The guide to this vanilla

Indonesian vanilla: the volcanic power of Sulawesi

Indonesian vanilla is a ripe, bold vanilla. Harvested at full maturity, sometimes until it splits naturally, it develops a powerful aromatic profile. The volcanic terroir of Sulawesi leaves its signature on it.

01

Ripeness pushed to the point of splitting

The bean is left to reach full maturity: some split naturally on the vine, a sign of maximum concentration. Drier to the touch but concentrated to the core, these beans are all frosted, a mark of their richness in vanillin.

02

Sulawesi, black soil at the foot of the volcanoes

The vanilla grows in black, dense soil saturated with minerals, in a wild terroir. The beans dry close to the volcano.

03

A smoky, spicy, leathery profile

The aromatic profile is pronounced: spiced red berries, orange peel, deep vanilla, muscovado sugar, with smoky, almost leathery accents.

How to use it

  1. Split and scrape (some beans are already split: that’s normal).
  2. Infuse: hot for intense pairings (dark chocolate, red berries), or cold for 24 to 48 h.
  3. A few seeds in sweet-savory dishes or in a reduced jus.

Storage

A drier bean, it keeps easily in an airtight glass tube, away from light.

The bean is harvested very ripe, on volcanic soil, and cured for a long time.

No. Natural splitting is a sign of full maturity.

Both: smoky and leathery, it lifts dark chocolate and has its place in sweet-savory recipes.
