The split frosted Planifolia vanilla from Tanzania is an exceptional bean born on the fertile volcanic lands of Kilimanjaro. Characterized by a unique natural crystallization and a very high vanillin content, it reveals indulgent notes of marshmallow, sweet spices and red berries. The result of a long signature curing, this intense, oily vanilla is the ultimate ingredient to give structure to your ganaches, intensify your creams or enhance your finest savory preparations.

A word from Paul

“This Frosted Planifolia from Tanzania, for me, is at the peak of its potential. I developed it the way I would develop a cake: with precision, rigor and a great deal of patience. It is a true pastry vanilla, which takes time to reach this level of depth and concentration.” “This curing is my own. Work carried out hand in hand with the growers to take the bean to its most accomplished expression. Today, it is clearly one of my greatest favorites. And you can taste it.”

The guide to this vanilla

Split frosted vanilla from Tanzania: a curing signature

Dense and concentrated, this frosted vanilla from Tanzania is above all a story of curing. Conceived like a recipe, it takes planifolia to its most accomplished expression: a true pastry chef’s vanilla.

01

A house curing, long and controlled

Harvested very ripe, sometimes naturally split, the beans are cured at length according to a precise protocol that develops complexity and promotes natural crystallization.

02

Marshmallow, sweet spices and red berries

The profile is clear and indulgent: marshmallow, sweet spices, red berries (strawberries, blackberries).

03

An oily bean, rich in essential oils

Rich in essential oils and naturally oily, with a high vanillin content. A fine white film forms on the surface over time.

04

The volcanic land of Kilimanjaro

The vines grow on the fertile lands surrounding Kilimanjaro: rich soils, mineral mountain water.

How to use it

  1. Split, scrape: an oily bean, rich in oils.
  2. Infuse to give structure to ganaches, creams, ice creams and flans; for a cold infusion, allow 24 to 48 h.
  3. In savory dishes, it stands up to reduced jus and robust sauces.

Storage

Concentrated, oily bean: store it in an airtight glass tube, away from light.

Its long, controlled curing, which concentrates the aromas to give structure to ganaches, creams and ice creams.

Harvested very ripe, its natural splitting goes hand in hand with an advanced concentration.

Same terroir, but here with an extended frosted curing, more concentrated.
