Vanilla pompona from Mexico
An indulgent wild vanilla
Pompona from Mexico is a wild vanilla with rich, indulgent aromas: floral, buttery, fruity notes, with subtle hints of olives and apples. Its taste is so expressive that you can almost enjoy it on its own, like a candy to bite into.
In pastry, it stands on its own in vanilla-centered desserts such as rice pudding. In cooking, it pairs perfectly with fish.
A rare and precious selection
This variety is produced in very small quantities, making it a gem for collectors and for chefs passionate about vanilla. The beans are long, plump and grown to full maturity. Some flowers are pollinated naturally by endemic hummingbirds and the region’s small bees, ensuring superior quality and incomparable aromatic complexity.
Mexican terroir, the cradle of vanilla
In the valley and hills of Usila, in the heart of the Chinantla jungle, in the state of Oaxaca, vanilla still grows in the wild. Here Vanilla planifolia and Vanilla pompona grow naturally, entwined with citrus trees, banana plants and tall tropical trees such as caoba.
The ancient name of these lands, Huitzila, “place of hummingbirds”, says it all. The flowers are pollinated by hummingbirds and small local bees. Each bird fertilizes only a few flowers per cluster, often the three most vigorous, ensuring concentrated beans with fine aromatic density.
This region is the homeland of vanilla, used by the Aztecs to flavor cocoa and coffee. Pompona vanilla from Mexico embodies this ancestral history, blending tradition and wild nature.
A word from Paul Galand
“Pompona from Mexico is a vanilla that made a deep impression on me. You can eat it like a candy, it is so aromatic and rare. The notes of olives and apples, along with its floral and buttery nuances, make it an exceptional vanilla.
The history of vanilla revolves largely around planifolia, yet pompona is also one of the species found in Mexico. It is less well known because it is rarer and lower in vanillin. However, it has an aromatic palette different from that of planifolia and can be eaten whole.”
