Vanilla planifolia from Tanzania
A vanilla with character
Very vanilla-rich, broad and deep, this vanilla develops notes of leather, red berries and caramel with a lovely roundness on the palate.
It naturally accompanies crème anglaise, pastry cream, ganaches and ice cream, but also has its place in savory cooking, bringing depth to a jus or a sauce.
A traditional curing process
After harvest, the beans are scalded, then naturally sun-dried for several weeks. They are then cured at length, for as long as it takes for the aromas to take shape and gain depth.
This maturation reveals a dense, expressive vanilla, harvested at just the right moment, shortly before the beans split naturally.
A living volcanic land
The vanilla is grown on the fertile lands surrounding Kilimanjaro, a territory shaped by volcanic activity and high mountains. The soils, particularly rich in organic matter and minerals, nourish abundant vegetation: coffee plants, sugar cane, mango trees and many vegetables grow there with remarkable vitality.
In this region, springs flowing from the mountain pass through rich volcanic layers, naturally taking on minerals. The purity and richness of the soil are such that the water is renowned for its exceptional quality. For vanilla, this environment is ideal ground: the plant grows slowly, feeds deeply and concentrates its aromatic compounds all the more.
An aromatic signature
Vanillas grown near volcanic land are known for their intensity and high vanillin content. Here, this high concentration translates into a deep, dense and lasting aromatic profile. A vanilla with character, shaped as much by the soil as by time.
A word from Paul Galand
“The first time I went to Tanzania, I was struck by the strength of this land. Around Kilimanjaro, the volcanic soils are incredibly rich, and you can taste it in the vanilla: it has depth, structure, a real presence. But beyond the taste, there are the women and men who grow it, with whom we are moving forward step by step to develop this supply chain. It is a vanilla I am attached to, for what it is and for where it comes from.”

Tanzanian vanilla: what the volcano gives the bean
Tanzanian vanilla owes everything to its land. Grown on the foothills of Kilimanjaro, it draws from volcanic soils an intensity and depth you can sense as soon as you open the pouch. It is a broad, full-bodied planifolia vanilla, made for lovers of character.
A land nourished by the volcano

A profile of leather, red berries and caramel
Very vanilla-rich, broad and deep, this bean develops notes of leather, red berries and caramel, with a lovely roundness on the palate. Vanillas born near volcanic land are renowned for their intensity and high vanillin content.
From harvest to curing
The beans are harvested at just the right moment, shortly before they split naturally on the vine. They are then scalded, sun-dried for several weeks, then cured at length, for as long as it takes for the aromas to take shape and gain depth.
Preserving all its richness
Keep the bean in an airtight glass tube, away from light and moisture, at room temperature. Over time, it may become covered with a fine frost of vanillin, a sign of its concentration.
How to use it
- 1Split and scrape the bean.
- 2Infuse seeds + bean: hot for 10 to 15 min, or cold for 24 to 48 h for maximum intensity.
- 3In savory dishes: add a few seeds at the end of cooking to a jus or a reduced sauce.
- 4Reuse the dried bean for homemade vanilla sugar or vanilla extract.
Both are planifolia, but the volcanic terroir of Kilimanjaro gives Tanzanian vanilla a more leathery, denser profile, whereas Madagascar vanilla plays on buttery roundness.
Yes. Its depth perfectly supports a reduced jus, a sauce or a butter, in addition to its sweet uses.
Tanzanian vanilla, with its notes of leather and red berries, perfectly supports dark chocolate and ganaches.
Yes, it is a dense, deep planifolia, stronger than classic Madagascar vanilla.
