Vanilla tahitensis haapape from Tahiti Raiatea
A floral caress from the Leeward Islands
In the heart of the Leeward Islands, on Raiatea, this Tahitensis Haapape unfolds a singular score, broad and enveloping.
Here, vanilla does not seek head-on power; it prefers depth, nuance, a slow conversation with the senses.
Its fragrance opens on delicate floral notes, then come sweet anise, fresh almond and morello cherry, with underlying hints of ripe prune. Less focused on vanilla strength than planifolia, it wins you over with its complexity and natural suavity.
It finds its truest expression in milk-based desserts, creams, rice puddings, entremets or cold infusions. Its floral freshness blossoms without being rushed by heat, letting its aniseed and fruity nuances come through.
A mixed botanical origin
Tahitensis is a living hybrid, born of a natural cross between Vanilla sotoarenasis and Vanilla odorata, two wild vines that once grew side by side in tropical forests. Introduced to French Polynesia, they found a new cradle there.
The Haapape variety, a subspecies of Tahitensis, gives longer, denser, particularly plump beans. On the island of Raiatea, the marine terroir leaves a deep mark on the plant: rich soils mixed with the remains of coral and fish bones, proximity to the ocean, constant humid heat. From this alliance comes a broad, supple, intensely aromatic vanilla, carrying an island signature within it.
Extreme ripeness, patient preparation
Unlike other origins, Tahitensis does not split open at full ripeness. The beans are therefore left on the vine for nine months, until they reach extreme ripeness. They are harvested black, fully mature, gorged with their essential oils.
Here, there is no scalding as in Madagascar. Polynesian preparation follows a different rhythm: drying alternately in the shade and in the sun, then daily massaging by hand for two to three months. This patient gesture concentrates and evenly distributes the essential oils at the heart of the bean. This slow process gives rise to an aroma that is both deep and fresh, of great purity.
In Tahiti, strict specifications govern this production: the moisture content must remain high, between 38 and 50%, guaranteeing suppleness, gloss and intensity. Neither below, nor above.
A word from Paul Galand
“I absolutely love this vanilla. It reveals notes of cherry, almond, prune and anise, very different from the Tahiti vanilla I have always known and smelled. It is like discovering two Polynesias that are nothing alike. Between Tahaa and Raiatea, there are similarities, but also distinct personalities. It moves you as much as it perfumes. It is a vanilla of memory and emotion, a vanilla that tells the story of its island.”

Tahitensis Haapape vanilla from Raiatea: patience made into a bean
In the heart of the Leeward Islands, on Raiatea, this Tahitensis Haapape unfolds a broad, enveloping score. It prefers depth, nuance, a slow conversation with the senses. It is a vanilla of memory and emotion, shaped by time.
Nine months on the vine: extreme ripeness
Unlike other origins, Tahitensis does not split open at full ripeness. The beans are therefore left nine months on the vine, harvested black, fully mature, gorged with their essential oils.
Polynesian preparation: the art of massage
Here, there is no scalding as in Madagascar: drying alternately in the shade and in the sun, then daily massaging by hand for two to three months. This gesture concentrates and distributes the essential oils, giving a deep and fresh aroma.
Strict specifications
In Tahiti, the moisture content must remain between 38 and 50%: this is what guarantees suppleness, gloss and intensity. The beans are long, dense, particularly plump.
A floral profile of almond and morello cherry
The fragrance opens on delicate floral notes, then come sweet anise, fresh almond and morello cherry, with hints of ripe prune.
How to use it
- 1Split the bean and scrape out the seeds.
- 2Preferably infuse cold (milk, cream, syrup): allow 24 to 48 h to reveal all its finesse.
- 3Keep it for milk-based desserts: rice pudding, crème brûlée, panna cotta.
Storage
Its high moisture content calls for care: keep it in an airtight glass tube, away from light, keeping an eye on its suppleness.
Harvested after nine months on the vine, it keeps a high moisture content (38 to 50%).
Preferably cold or at the end of cooking, to preserve its floral and cherry notes.
Long harvest, manual massaging and high moisture: Raiatea vanilla is the result of demanding production.
It is the same species; Raiatea and Tahaa are neighboring islands, but they yield distinct personalities.
