Vanilla pompona from Peru
A wild intensity
Intense and wild, Pompona vanilla from Peru develops notes of tobacco, tonka, leather and red berries.
Known as “Sekut” by the indigenous communities of the region, it is considered the original vanilla.
Its identity is closely tied to its exceptional terroir: humid equatorial climate, dense vegetation, rich and living soils.
Thanks to its aromatic power, this vanilla stands up very well to cooking. It balances sweet preparations perfectly, especially baked doughs such as croissants, brioches… In savory dishes, it pairs very well with roast meats, reduced sauces, robust jus, and above all foie gras.
Be careful with the dosage: the bitterness is pronounced, especially in the skin, where most of the aromatic compounds are concentrated. Use the whole bean, but sparingly. Used too heavily, it can dominate and unbalance a preparation.
Rare crystallization and molecular signature
In addition to coumarin, Pompona naturally contains as much vanillin as a planifolia. It develops a true vanilla intensity, which brings it close to a planifolia vanilla. Despite its botanical differences, you clearly find that familiar aromatic thread: roundness, depth, a clear vanilla sensation.
Its most characteristic crystallization does not come from vanillin, but from coumarin, present in large quantities in this variety. This molecule can appear as slightly orange microcrystals, embedded in the skin of the bean.
This may be surprising, or even mistaken for mold.
It is a natural signature, proof of its molecular richness and aromatic concentration.
Amazon rainforest – Endemic origin
This pompona is endemic to the Peruvian Amazon rainforest. It still grows in the wild. Pollination is natural: hummingbirds, melipona bees, ants and other insects help carry the pollen.
It is a vanilla of pure origin, from a living ecosystem. Production is limited, irregular, dependent on nature.
A word from Paul Galand
“Peruvian Pompona is a wild vanilla in every sense of the word. It is also one of the vanillas that surprised me most when I held it in my hands.
When I bit into the bean for the first time, I spat it out instantly. I found it too bitter, too raw. So I started working with it, cooking with it to understand it. In ice cream, in baked dough, in cooking… and then it revealed itself as extraordinary.
It is powerful, very aromatic, with a unique ability to ‘de-sweeten’ preparations, to rebalance a dessert. For me, it is one of the best vanillas in the world for making vanilla ice cream.”

Pompona vanilla from Peru: the original vanilla
Intense and wild, Pompona vanilla from Peru is considered one of the forms closest to the original vanilla. Known as “Sekut” by indigenous communities, it develops deep notes of tobacco, tonka, leather and red berries.
“Sekut”, a wild vanilla from the Amazon
Endemic to the Peruvian Amazon rainforest, it still grows in the wild, naturally pollinated (hummingbirds, melipona bees, insects). Limited and irregular production.
Coumarin and vanillin: a molecular signature
In addition to coumarin, Pompona naturally contains vanillin: a true vanilla intensity. Its characteristic crystallization comes from coumarin, in the form of slightly orange microcrystals in the skin, not to be mistaken for mold.
Getting the dosage right: the bitterness of the skin
Be careful with the dosage: the bitterness is pronounced, especially in the skin. Use the whole bean, but sparingly.
How to use it
- 1Use the whole bean (seeds + skin) sparingly.
- 2It stands up very well to cooking: perfect in ice cream, where it “de-sweetens” the preparation.
- 3In savory dishes: roast meats, reduced sauces, foie gras.
Storage
A wild and concentrated bean: keep it in an airtight glass tube, away from light. The orange microcrystals are natural.
No, they are crystallized coumarin, the natural signature of Pompona.
Its skin is rich and slightly bitter: used too heavily, it dominates.
Its power and its ability to “de-sweeten” rebalance a frozen dessert.
