Vanilla pompona from Colombia
A wild vanilla
Pompona from Colombia is a wild vanilla with a unique, intense aromatic profile. Its broad, stocky beans deliver notes of ripe fruit, apple, tobacco and white flowers. The skin is rich in flavor and candied, so much so that you can enjoy it like a fruit.
In pastry, it brings power and depth to sweet preparations, and it can also be used sparingly to enhance savory recipes.
A rare and precious selection
This vanilla is produced in extremely limited quantities, less than 2 kg per year, making it a treasure for chefs and collectors. The beans are carefully picked at full maturity and kept to reveal their full aromatic potential. Some of the flowers are pollinated naturally by hummingbirds and small Euglossine bees, ensuring exceptional quality and aromatic complexity.
Terroir of the Colombian Andes
Native to Támesis, in the Andes at more than 1,800 meters above sea level, this vanilla develops in a rich and diverse ecosystem. It often grows on cocoa trees, in plantations mainly devoted to cocoa, benefiting from the fertile soils and the humid climate to concentrate its aromas. This unique terroir brings this vanilla close to those of Mexico, Brazil, Panama and Ecuador, where wild nature and endemic pollination play a crucial role in the aromatic development of the beans.
