Paul Galand’s story

My Story

Behind Galand Vanille lies, above all, the story of its founder, Paul Galand. Much more than a 26-year-old vanilla expert, Paul is an artisan of taste driven by an all-consuming passion.

01Grandmothers’ kitchens

A Childhood Steeped in the Emotion of Taste

This quest for perfection takes root in his grandmothers’ kitchens. From a very young age, he watches their precise gestures, inheriting a know-how steeped in generosity. Crème caramel, creamy rice pudding, fig jam from the garden or apricot tarts... Every one of Paul’s childhood memories is inseparable from a note of vanilla, the common thread of his sensory awakening.

02Tahiti and Le Mans

From Tahiti to Le Mans: The Birth of a Vocation

Very early on, vanilla becomes a fascination. Its mysterious vines, the sensuality of its beans and the complexity of its aromas captivate the young boy from Le Mans. Thanks to a branch of his family from Tahiti, he discovers the power of origins and starts his own collection at the age of 13. Introduced to wine and gastronomy by parents passionate about both, he hones his palate and sense of smell, turning a child’s curiosity into sharp expertise.

03With the great masters

The School of Excellence with the Great Masters

Armed with a CAP in baking and pastry and an additional specialist qualification, Paul Galand forges his exacting standards alongside the greatest names in French pastry. His time with Philippe Conticini and Cédric Grolet allows him to combine family tradition with flawless technical creativity. For Paul, an exceptional dessert is born from the perfect balance between finesse and originality.

04Growers around the world

Galand Vanille: The Benchmark for Exceptional Vanilla

An adventurer and nature lover, Paul now travels the globe to unearth wild and hidden vanillas. By building relationships of trust with the best growers in the world, he has created a unique collection. In 2023, he founded Galand Vanille in Paris. The house now offers fifteen exceptional varieties from some sixty origins, all cured with recognized artisanal know-how. Today, the greatest pastry chefs call on Paul Galand’s expertise to enhance their creations with bespoke vanilla pairings.

This commitment lives on today in our direct-from-growers approach and in our exceptional vanillas — right down to our vanilla from Brittany, grown in Côtes-d’Armor.
