The Galand Vanille guide

Vanilla Bahiana

A wild vanilla among the rarest in the world

Bahiana vanilla (Vanilla bahiana) is one of Brazil’s least-known treasures. A wild species, it stands out for its spectacular red beans and an aromatic profile of rare intensity. Paul Galand selected it direct from the growers for its absolute singularity: there is nothing comparable in the world of vanilla.

A powerful and unusual aromatic profile

What strikes you first is its richness in vanillin: a content above 6%, among the highest you can find. On the palate and on the nose, bahiana unfolds an unexpected palette:

  • notes of dried chili, warm and spicy
  • the roundness of roasted walnut
  • a woody sweetness of maple syrup

A vanilla of character, for curious palates and bold creations.

Curing and texture: the mark of time

Each batch is cured with patience. Because of its rarity, the size of Bahiana beans may vary. Some may also be split.
