Vanilla planifolia frosted from Brittany
French-style elegance
Brittany Vanilla is extremely rare, the fruit of an improbable encounter between a tropical orchid and the maritime climate of the Armorican peninsula. Its beans, particularly plump and glossy, reveal a gentle aromatic profile. You’ll find amber notes and salted-butter caramel, subtly lifted by a hint of minerality that recalls its coastal origin. It is a vanilla all about balance, favoring elegance and length on the palate.
Its most singular signature comes down to two words: a milky roundness found in no other origin, carried by a woody, distinctly vanilla base, with nuances of chocolate and leather.
Brittany Vanilla excels in delicate preparations where its finesse can fully express itself: a traditional crème brûlée, a vanilla beurre blanc to accompany scallops, or a fine, lightly sweetened pastry.
Outstanding size and richness
Each bean weighs over 4 grams, a remarkable size, the sign of a plant grown without stress and picked at full maturity. With a moisture content close to 30%, it belongs to the gourmet grade: supple, oily, easy to split and scrape.
Its surface becomes covered with fine white crystals. This frost is not a defect but pure vanillin that has risen to the surface of the bean: it is the mark of the most aromatically concentrated vanillas.
Nine months of curing, in three stages
Where tradition scalds the beans in hot water, the Breton vanilla follows a path of its own. It first goes through cold, which triggers the enzymatic process and releases the aroma precursors. Then comes slow drying in a drying chamber, which concentrates the juices without ever rushing the bean. Crystallization crowns it all, after nine months of patience.
High-precision French expertise
Producing vanilla in the Côtes-d’Armor is a technical and human challenge. Each flower is hand-pollinated with absolute rigor, in an environment where humidity and temperature are regulated to simulate an eternal tropical spring. This total control produces beans of impressive size, packed with aromatic seeds.
Three vintages have come to fruition, in 2023, 2024 and 2025: vanilla grown in France is no longer an experiment, it is a reality and one of the shortest supply chains there is, from the flower to your kitchen, without any intercontinental transport.
Delivered in its glass tube
A bean of this size deserves protection: it reaches you in an airtight glass tube, away from light, which preserves its suppleness and crystals for months.
A word from Paul Galand
“For me, Breton vanilla is a true feat. What I admire is this ability to tame the exotic and adapt it to our land. It has a milky roundness you won’t find anywhere else, almost as if the sea air had infused the bean as it grew. It’s the ultimate luxury in vanilla: rare, local and absolutely pure.”

A rarity born on the Armorican peninsula
Producing vanilla in Brittany is a challenge: far from the tropics, it is human mastery that recreates the conditions the vine needs. This vanilla grown in France is an exception: local, rare, carrying expertise that few terroirs can claim. We tell the full story of this adventure in the story of vanilla grown in Brittany.

A floral, mineral profile
Notes of white flowers, lifted by a hint of minerality recalling its coastal origin, and a milky roundness found nowhere else.

Storage
In an airtight glass tube, away from light and heat. No refrigerator. The vanillin crystals may become more pronounced over time: that’s a good sign.
Yes, in the Côtes-d’Armor, in an environment where humidity and temperature are regulated to recreate an eternal tropical spring. Each flower there is pollinated by hand.
A unique milky roundness and marine minerality, and a rarity linked to its very limited French production.
Over 4 grams each, with moisture close to 30%: this is the gourmet grade, supple and oily, the one pastry chefs look for.
It is pure vanillin that crystallized on the surface during curing. It is the sign of a bean very rich in aromas, not to be confused with mold: the crystals are shiny, dry and melt under your finger.
The 2025-2026 vintage, the third successful harvest of this French production.
Both: crème brûlée and fine pastry, but also a vanilla beurre blanc for scallops.
