A pastry chef by training who has worked in the greatest houses, Paul Galand travels the plantations of the world — Madagascar, Tahiti, Tanzania, Colombia — to bring back the rarest vanilla beans.
Every vanilla bean tells of a land, a climate and the work of a passionate grower.
“An absolutely exceptional vanilla sourcer.”
François-Régis Gaudry, France Inter
“One of the greatest vanilla experts in the world.”

[…] Une pure satisfaction…
Me reste plus qu'à déguster.
Rare vanillas grown with passion and expertise
I visit the growers, taste every batch and keep only the vanilla beans I would serve to a chef.
A vanilla flower lives only a few hours and is pollinated by hand. Then come nine months on the vine, followed by several months of drying and curing. I pay a fair price for this work.
Every vanilla bean is cured in my workshop in Paris. In a glass tube, away from light, it keeps for years. A problem with your delivery? Write to us.
Paul’s advice
Store
Between 15 and 20 °C, away from light, a vanilla bean doesn’t expire: it improves with time. Never in the refrigerator: moisture damages it.
The storage guideUse
Scrape out the caviar, then let everything infuse cold in the milk or cream for 24 to 48 hours. Once empty, the bean can still scent a jar of sugar.
Pastry techniquesWhite crystals on your vanilla beans? That’s vanillin frost, a sign of quality.
CrystallizationWhich vanilla varieties do you offer?
We source 19 origins covering the main vanilla species: planifolia (known as Bourbon), the most famous, with indulgent, cocoa-like notes; tahitensis, floral and aniseed, emblematic of Tahiti; pompona, rare and powerful, nicknamed “banana vanilla”; and extremely rare species — cribbiana, bahiana, chamissonis, sotoarenasii, odorata — found nowhere else.
To choose according to your taste, see our guide to the varieties or let our quiz guide you.
What is the difference between Bourbon vanilla and Tahitensis vanilla?
Vanilla planifolia Bourbon from Madagascar is very rich in vanillin, with warm, woody notes. Tahitensis, which contains almost no vanillin, is more floral and offers subtler, more exotic aromas. Each variety has its own personality!
Are the vanilla beans sustainably grown?
Yes. We work exclusively with growers committed to practices that respect the environment and local communities — this is the heart of our direct-from-growers approach, told in our story.
